In My Bag - Day 7

What's in my bag? Well, lots and lots of blueberries! This year we have been extremely blessed with blueberries. Gallons and gallons have been put in the freezer this year for us to enjoy smoothies, blueberry cream cheese pound cake, blueberry pancakes, blueberry chess pie, I could go on and on but I will stop.
 
 
 

 
 
I have also been blessed with about 20 gallons of cucumbers out of the garden this year. I am still processing pickles and sweet pickle relish. I can see the light at the end of the tunnel though.
 

 
 
I just brought these in from the garden today. My vines are yellow and dying so I think this is the last of the cucumbers this year.

How to "roast" your pumpkin in your crockpot....

Every year we go to the pumpkin patch and all the bugs bring home a pumpkin to paint and eventually cook.
 
 
We have always liked to roast our pumpkins in the oven for using in pies, pastries, chocolate chip pumpkin bread (which happen to be my families favorite!) and other yummy recipes calling for pureed pumpkin. After seeing numerous posts about roasting a pumpkin in a crock pot, I decided to try it. It works great!
 
Here's the full instructions below!
 
 
1) 1 pumpkin (if wanting to roast whole, use a pie pumpkin) ours was too big, so I cut it into a few large pieces.
 

 
2) I took the seeds out of mine, but you don't have to.

 
3) Put the pieces into your crock pot with 1 cup of water and cook on low for 6-8 hours or until soft.



 
4) Here you go, beautifully cooked pumpkin! Now, scoop out the  cooked pulp and puree in the food processor until completely smooth.
 

 
5) It should look like this right out of your processor. Enjoy!

potatoes.......

Everyone harvesting the potatoes this past Saturday morning. We didn't have quite the crop we were wanting but it is always a blessing to have any!

green beans.....

This is what we were doing yesterday. GREEN BEANS!!! This was our first picking of green beans out of the garden.



We ended up with 6 gallons of beans to put in our freezer. This is just the beginning! Bring on the squash and cucumbers!

FEELING GOOD!!!

I will be 22 weeks pregnant Monday and I am feeling good! Finally!

I have been catching up on things around the house and garden that I have neglected since I was feeling so bad in my 1st trimester. Now that I am in my 2nd, and feeling great, I decided to play catch up!

This past Wednesday, one of my best friends called me to let me know that she found strawberries for $7 a flat at a local salvage store near by. I decided this would be a perfect opportunity put some strawberries in the freezer. I ended up with four flats and decided to put some in the freezer, can some of them and make some strawberry jelly! She also let me know how easy and fast it is to use an egg slicer for slicing strawberries. It worked like a charm!

Here is what mine looks like:




I have, so far, put sliced strawberries in the freezer, strawberries with a little sugar (for strawberry shortcake) in the freezer, sliced strawberries up in jars and next week, after our little bugs birthday Monday, make strawberry jelly with the remaining 6 lbs. that is still in the frig.





I figure while I am feeling so good, I might as well do all I can until I start feeling rotten again!
